Strawberry confetti cake



This was a cake I made for fathers day. It is a spongecake filled with strawberries and jam, covered with strawberry buttercream, topped of with some confetti and almonds.

You will need a 15 cm cake mold

For the spongecake:
200 gram egg
70 gram caster sugar
1 tsp vanilla essence
80 gram self raising flour
pinch of salt
16 gram milk
30 gram melted butter, room temperature (unsalted)

1. Grease your cake mold and preheat oven at 180 degree C.
2. Beat egg, caster sugar, vanilla essence and salt until it becomes thick and fluffy.
3. Add milk and melted butter, mix well.
4. Sift cake flour into the mixture and fold in the flour.
5. Pour into cake mold and bake for about 25 minutes, use a toothpick to check whether the cake is done, if the toothpick comes out dry your cake is done, if not, bake for another 5 minutes.
6. Let the cake cool down completely on a wire rack

For the Italian Meringue Buttercream:
200 gram sugar
50 gram water
2 egg whites
250 gram butter, in chunks
1 cup of strawberry puree (simply blend some strawberries to make your own strawberry puree)

1. Heat 150 gram sugar (so not all of the sugar!) with water in a pan until it reaches 120 degrees (use a thermostat) to make the sugar syrup.
2. Beat the egg whites in an electric mixer until stiff (don't overbeat it), add the remaining sugar.
3. Turn the mixer on high speed and pour the syrup into the whipping egg whites, be very careful because the syrup is extremely HOT! Aim for the spot between the wall of the bowl and the edge of the whip. 
4. Beat for about 10 minutes so the italian meringue can cool down to room temperature.
5. Add the butter chunks one by one, until it's all incorporated. Make sure the meringue is cooled down, otherwise your butter will melt, you want your buttercream to be fluffy!
6. Now add the strawberry puree and mix well.

Assembling the cake:
1 cup of fresh sliced strawberries
2 tbs strawberry jam
some sprinkles
sliced almonds

1. Cut your cake horizontally to make two layers.
2. Spread the strawberry jam on one layer, then put the strawberries on top.
3. Put your second layer on top.
4. Cover the rest of your cake with the buttercream
5. Decorate with confetti and almonds, be creative!
